Classes are for anyone desiring to explore baking from the beginning. $25 materials fee payable in class.   Knowing how to handle your knife is among the most fundamental of skills and will give you the confidence to become a more efficient cook. Topics include: basic cuts, how to handle your knife, and care for your knife. Each student will learn how to cut up a whole chicken.   “The Queen of Hearts, she made some tarts, all on a summer’s day…” This line from the poem The Queen of Hearts is a favorite of children’s literature – but how are tarts made? Join this hands-on workshop and learn about basic pie dough and sweet short crusts. Learn the secret to making flakey and crisp crust, how dough should feel, and why some recipes do not turn out even when closely followed. Once the crusts are made, students will fill them with seasonal fruit, and finish with lattice tops. $30 materials fee payable in class.
