  Do you know the health benefits of an Indian diet? This course captures the essence of vegetarian, home-style North Indian cooking while emphasizing the health benefits of the ingredients. Topics include: better cooking practices, proper food storage, and equipment suggestions to facilitate cooking. Dishes: lentil, yogurt, Raita, Indian breads, Indian cheese, eggplant. $20 materials fee payable in class. Bring a bowl and spoon for tasting. Advance registration required. Note: Classes are held in the cooking classroom in the Campus Center (CC-Building). The instructor will meet students at the entrance to the Piazza, in the lobby of the Campus Center where they will be taken back to the classroom.
